🇫🇷 Dijon Mustard Salmon with Green Beans


Prep + Cook Time: 30 minutes Serves: 4

🛒 Ingredients

For the Salmon:

  • 4 salmon fillets (about 6 oz / 170 g each)
  • 2 tbsp Dijon mustard
  • 1 tbsp whole-grain mustard (optional, for texture)
  • 1 tbsp honey or maple syrup
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and freshly ground black pepper, to taste

For the Green Beans:

  • 1 lb (450 g) fresh green beans, trimmed
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • ½ tsp salt
  • Freshly cracked pepper, to taste

For Serving:

  • Lemon wedges
  • Fresh parsley or dill, chopped

🔪 Preparation

Make the Dijon Glaze:

  • In a small bowl, whisk together Dijon mustard, honey, olive oil, lemon juice, salt, and pepper until smooth.

Prep Salmon:

  • Pat salmon fillets dry and place on the baking sheet.
  • Brush the Dijon glaze evenly over the tops.

Prepare Green Beans:

  • Toss green beans with olive oil, salt, and pepper.
  • Arrange them around the salmon on the same skillet for easy clean up. (I like cooking mine separately :D)

🍳 Cooking Instructions

Cook the Green Beans:

  • Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium heat.
  • Add green beans and sauté for 2 minutes until they start to blister slightly.
  • Add garlic, salt, and pepper; stir for 30 seconds.
  • Pour in 2 tbsp water or broth, cover, and steam for 3–4 minutes, until tender-crisp.
  • Remove green beans and set aside on a plate. Wipe the skillet clean.

Cook the Salmon:


  • In a skillet, heat a drizzle of olive oil over medium-high heat.
  • Pat salmon fillets dry with paper towels and season with salt and pepper.
  • Sear salmon skin-side down first for 3–4 minutes, until crisp.
  • Flip and brush the tops generously with the Dijon glaze.
  • Lower the heat to medium, cover, and cook another 3–5 minutes, until the salmon is cooked through and flakes easily.

Combine and Finish:
  • Return the green beans to the pan alongside the salmon for the last minute of cooking, just to warm through and absorb some of the glaze.
  • Squeeze fresh lemon over the top.
  • Sprinkle with chopped parsley or dill before serving

    💡 Chef’s Tip:

For a creamy twist, stir 1 tablespoon of butter or light cream into the pan juices right before serving — it creates a silky, restaurant-style Dijon sauce.
