🇮🇹 Creamy Tuscan Chicken

🛒 Ingredients
For the Chicken:

  • 4 boneless, skinless chicken breasts (about 1½ lbs total)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil

For the Creamy Sauce:

  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach leaves
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ cup chicken broth (or water)
  • ½ tsp crushed red pepper flakes (optional, for a gentle kick)

For Garnish (optional):

  • Fresh basil leaves
  • Extra grated Parmesan

🔪 PreparationSeason the Chicken:

  • Pat chicken breasts dry with paper towels. Season both sides with salt, pepper, and Italian seasoning
  • Prepare the Veggies:
  • Slice cherry tomatoes in half and mince garlic. Rinse spinach and set aside.

🍳 Cooking Instructions:

  • Sear the Chicken:Heat olive oil in a large skillet over medium-high heat.
  • Add chicken breasts and cook 5–6 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F / 74°C).
  • Remove from skillet and set aside.| Make the Sauce:

In the same skillet, lower heat to medium.

  • Add minced garlic and sauté 30 seconds until fragrant.
  • Add cherry tomatoes and cook 2–3 minutes until they begin to soften.
  • Pour in chicken broth, scraping up any browned bits for flavor.
  • Add the Creamy Base:Stir in heavy cream and Parmesan cheese. Simmer 2–3 minutes until slightly thickened.Add spinach and stir until wilted.

Combine:

  • Return chicken to the skillet, spooning sauce over the top.
  • Simmer 2–3 more minutes until everything is heated through and creamy.


Serve:

  • Garnish with fresh basil and extra Parmesan.Serve hot with pasta, mashed potatoes, or crusty bread.

💡 Chef’s Tip:

For a lighter version, substitute half the cream with milk and reduce Parmesan slightly. Add sun-dried tomatoes for extra Tuscan flair.
