Kare Kare (Filipino Oxtail Stew) - Dad's Recipe

Kare Kare is a type of Filipino stew with a rich and thick peanut sauce. It is a popular dish in the Philippines. The traditional recipe is made with ox tail, string beans, eggplant, bok choy and red bell pepper (Red bell pepper is what Dad used to add to this dish because I'd complian it needed more contrasting colors :D I was 8. But it's become a part of our dish).
I use chunky peanut butter and whole peanuts for the sauce.
This is my Dad's version of the recipe. And yes, I think it's the best.

SERVES 6 people

    INGREDIENTS:
  • 3 lbs oxtail 
  • 1 piece small banana flower bud sliced
  • 1 bundle pechay or bok choy
  • 1 bundle string beans cut into 2 inch length
  • 4 small - medium eggplants sliced 3/4 inch thick
  • 1 cup ground or whole peanuts
  • 1/2 cup peanut butter
  • 1/2 cup shrimp paste
  • 34 Ounces water
  • 4 cloves garlic chopped or minced
  • 1 medium chopped
  • salt and pepper to taste
  • 1/2 tsp garlic and onion powder 
  • 1 packet Kare Kare mix
  • Optional: Red bell pepper for color pop :D

Instructions:
1. Rinse oxtail and pat dry. Season with salt, pepper, garlic and onion powder. Let sit for 10 min.

2. In a hot skillet, sear oxtail on all sides. Set aside.

3. In a large pot, brown bacon, add chopped onions and garlic until brown.
4. Return oxtail in large pot, add water covering top of meat. Simmer for 1 to 1.5 - 2 hrs or until tender. Add more water as needed.  (35 minutes if using a pressure cooker)
5. Add the ground or whole peanuts, peanut butter, and Kare Kare mix. and simmer for 5 min.
6. Once meat is tender, add vegetables and continue to simmer covered for 15 minutes.
7. Serve hot with rice. Top with shrimp paste.
