Having meats on sticks brings me back to my childhood. We called it Monkey Meat The aroma of the marinade, the charcoal grill heating up and the sizzling sound the meat makes when it hits the hot grill. Juices dripping on the coals. It's like I'm in our backyard all over again. My dad and my uncle manning the grill, the women folk in the kitchen chatting it up while preparing the rest of our weekend dinner. It's funny how food brings back such vivid memories and puts a smile to your face. 😀
I love charcoal grilled food. Usually we use that or the gas grill. (Yes, the husband is collecting grills LMAO). But it's been cold outside so with this version, I used the Pampered Chef Deluxe Airfryer with the air fryer attachments. 20 minutes and done!
The airfryer attaachment has eight 8 inch stainless steel skewers, rotisserie bar and 2 rotisserie wheels.
INGREDIENTS:
1 pound boneless, skinless chicken, cut into 1 1/2 - 2 inch cubes
2 large bell peppers any color
1 large sweet onion
FOR THE MARINADE/SAUCE
1/2 cup soy sauce
3 tablespoon honey or brown sugar
2 tablespoon lime juice
3 tablespoon cider vinegar or Mirin
2 cloves garlic, finely chopped
1 teaspoon grated fresh ginger or powder
1/2 cup water
1 cup fresh or canned pineapple chunks
12 wooden or metal skewers (Soak wooden skewers for 30 minutes before threading meats and vegetables. This will minimize wood from burning)
💢Set aside 1/3 of marinade for the vegetables💢
INSTRUCTIONS:
1. Prepare sauce by mixing together all sauce ingredients in a bowl or shake them all up in a mason jar.
2. Place meat and 2/3 of marinade in an airtight container or ziplock bag. Place in the fridge and marinate minimum 1 hour. Place remaining marinade and vegetables in separate container to marinate.
3. Remove chicken and vegetables from bag and place into a bowl. Keep marinade from vegetables for basting as desired.
**Make your skewers alternating between veg, chicken, pineapple.
4. Preheat grill to medium-high heat. If using grill pan on stovetop, coat pan with oil before arranging skewer on pan. Cook/grill for 5 minutes each side or until chicken is cooked through.
